The Accademia dei Maestri del Lievito Madre e del Panettone Italiano is organising the week-long edition of THE MOTHER YEAST MASTERS’ NIGHT: the appointment with Italy’s greatest Master Confectioners and their naturally leavened artisan products. A wonderful opportunity to promote the excellence of artisan Panettone by comparing the different cultures of those who produce this dessert using only mother yeast, the real identifying and characteristic factor of each territory.
